The property is looking for an experienced rosette Sous Chef that can bring new and innovative ideas to the food offering. Situated on the banks of the Ness the property has a reputation for locally sourced ingredients and prides itself on its fine dining history.
As Sous Chef you will be responsible for helping the Head Chef manage the day to day running of the business which will be agreed by you and the executive team as part of the overall estate strategic vision and development. You will be working closely with the Head Chef and you will both be accountable for the financial day to day targets as well as agreed GP’s and supplier negotiations, you will be fully on board with the product and will work to a clear business plan.
Our client is looking for someone who has passion for innovative menus, an interest in food provenance, and a keen interest in training junior members of the team. You should also have a good working knowledge of HACCP, Food Safety and Allergen Legislation procedures. Previous experience in a similar role is essential as are computer skills and financial acumen, together with the ability to organise and prioritise a busy workload.
