Bubala, a Vegetarian Middle Eastern Pop Up to go Permanent this Summer

A vegetarian pop up restaurant is to open its very first permanent 30-cover restaurant on Spitalfields’ Commercial Street in the next few months.

Head chef Helen Graham will be leading the kitchen, and has worked at London restaurants such as The Good Egg and The Palomar.  The menu will include dishes such as fried aubergine with zhug and date syrup, confit potato latkes and a selection of Middle Eastern and Lebanese wines along with a short list of cocktails.

The new restaurant and former pop up was names after a Yiddish term that roughly translates to ‘sweetheart’ and is often used by older family members, which is a nod to founder Mark Summers’ background.  The site is metres away from the house that Summers’ grandad grew up in.
